The Aamanns / Copenhagen team have finally been able to show what we’re capable of.
Here are photos of Bjarke Ingels Group’s (BIG) New York reception in their celebration of their new offices in Chelsea. The Danish Crown Prince and Crown Princess attended the event, where danish rock duo Raveonettes performed live.
Today Adam and our team have been sampling Smørrebrød on Union Square at the New Nordic Cooking event for thousands of curious New Yorkers.
We had made special pork terrine with hazelnuts, aquavite, green kale and apples. Among the favorite bites were the endives with juniper cured salmon, purée of cauliflower and browned butter.
We also had a chance to introduce marzipan cake (mazarinkage) to many – somewhat of a curiosity. But the fresh organic raspberries and vanilla yoghurt on top of were familiarly inviting.
Head chef René Redzepi from the renowned #1 restaurant in the world “Noma” and Claus Henriksen from Dragsholm Slot were also here, the former serving salty “æbleskiver” and speaking about Nordic Food to the audience and the latter handing over wonderfully crunchy carrot and jerusalem artichoke cruditées with smooth oyster cream.
We have a day’s peace and quiet now, before the big day on Monday where our official pre-opening event is to take place. We will be in the kitchen all day tomorrow!
